The Signature Series MK-I is a statement piece that sets the direction of the brand. Built around the MK-I blade profile, it bridges the gap between fully bespoke work and more accessible production pieces, with no compromise on materials, performance or finish. A true workhorse, made for everyone. The result is a sharp, maintainable blade you can use hard without worrying about chipping.

The Blade

The blade is offered in a choice of two steels: 14C28N stainless or 80CRV2 carbon. Both are chosen for their excellent edge retention, toughness and ease of maintenance. Taking influence from Japanese blade profiles, the edge is notably flat, encouraging clean, controlled cuts and excellent board contact. At 200mm long with a generous 60mm heel height tapering to an extreme, fine point, the blade offers real accuracy for intricate work while giving the knife a bold, assured presence.

The Handle

The handle is shaped from stabilised Turkish walnut, worked to a clean 20x20mm round profile and finished at 150mm long. Natural grain and subtle figuring give every knife its own character, while a refined silhouette keeps the series consistent.

Care

Available in carbon or stainless, the MK-I rewards a little care. Keep it clean, dry and lightly oiled, and the carbon option will develop a natural patina with use. See our Knife Care page for the full routine.

Care & sharpening

Looked after well, a HandFab knife will serve you for a lifetime. Keep the blade clean, dry it after use and give it a light coat of food-safe oil now and then. Carbon steel will earn a patina with use, part of its character. Hand wash only, never the dishwasher, and store it somewhere the edge is protected.

When the edge eventually needs bringing back, send the knife home to the workshop. Brad re-grinds and hones it by hand on the same stones it was finished on, so it returns as sharp as the day it left. The sharpening service is £15 per knife, plus return delivery.

It will be profiled, ground, fitted and finished by hand in a Scottish workshop, for you, after you order it. Here is what that looks like.

The steel

80CrV2 carbon, profiled from stock before any of the hand work begins. It is chosen for edge retention, toughness and how readily it sharpens. Every blade is then worked individually rather than run down a line.

Ground by eye

The bevel is set by hand on the grinder, judged by feel and sight. Taking its lead from Japanese profiles, the edge is notably flat, which is what gives clean, controlled cuts and full contact with the board.

Fitted to timber

Stabilised Turkish walnut, shaped to the tang in a considered take on the traditional wa-style handle. A faceted top edge meets a rounded belly, so it sits well in the hand and still holds a silhouette. The grain in yours exists nowhere else.

Finished and boxed

The edge is refined and the maker's mark stamped. It ships with a branded saya, wrapped in linen and boxed, dispatched using a 24 hour age verification service.
