Three Series

One set of blade profiles, built three ways. Apex is stainless San Mai. Classic and Signature are made from 80crv2 to order in Scotland. Choose by material, not by shape.

The New Range

Apex Series

Brad's MK-I geometry in stainless San Mai, two layers of stainless clad around a BG42 steel core. The core takes a keener edge than either carbon series and holds it longer, and the stainless outer means there is no patina to manage. For cooks who want the sharpest edge in the range with none of the upkeep.

Classic Series

The proven profiles in more accessible materials. 80CrV2 carbon steel, flat-edged for clean board contact, in a traditional wa-style handle of ebony and rosewood. For cooks who want a knife used daily rather than kept.
