Honestly, I don’t even know where to start.
I’ve spent more money than I’d like to admit on Japanese knives over the years, but the MK-1 Double Saber (Somewhere in the Galaxy) is easily my favourite knife I’ve owned. Since getting it, it’s the one I reach for every day.
The weight and balance just feel right. It takes a great edge, sharpens easily, and has had no problem keeping up with the 50–70kg of prep I do every week as a chef. It’s one of those knives that just feels like it was made to be used.
I was that impressed with it that I ended up commissioning a custom knife as well. The whole process has been brilliant. Every question I’ve asked has been answered, and the amount of time that’s gone into talking me through different steels, profiles and handle options has been amazing.
The thing that impressed me most was that it never felt like I was being pushed towards spending more money. The advice was always about what would suit me best, not what would make the biggest sale. That’s pretty rare these days and says a lot about the person behind the knives.
It’s obvious there’s a lot of pride in the work, and it shows in the finished product. I honestly couldn’t recommend Handfab enough, and I’m looking forward to seeing my custom knife finished.
