Introducing the Apex Series.
This is something I’ve been working on for months…
As a designer, I’ve always believed this business should be about creating products that more people can enjoy. Not everyone has the budget for a one-off, fully handmade commission, and after speaking with countless people since starting this journey, it became clear that there was a gap between affordable production knives and high-end handmade pieces.
The Apex Series is my attempt to bridge that gap.
I’ve taken the same aesthetics, attention to detail and standards I hold myself to with my handmade pieces and applied them to a knife designed for modern processes.
That doesn’t mean compromising on materials or performance.
The geometry is my own MK-I design, developed through everything I’ve learned about materials, ergonomics and blade design. The materials have been carefully selected, and the production process has been chosen to maintain the quality I expect from my own handmade work.
The result is a stainless steel San Mai construction with a BG42 powder steel core- an exceptionally high-performing steel capable of taking a razor-sharp edge while offering incredible edge retention.
The handle is ebony: hard, timeless and naturally deep in colour.
Dimensions are 200mm long by 55mm at the heel.
By moving towards a scalable manufacturing process, I can reduce the cost of production without compromising the things that matter.
The Apex Series will of course carry my name- and it will still be held to my standards.

It goes without saying these knives are quite literally hand fab wow.
I went with a few thoughts and ideas and they have just been blown out of the water with amazement.
They cut like a dream like a hot knife through butter if you will. All I can say is compliments. The whole process was fantastic with constant check ins to make sure I’m happy with everything to sending update pics through the whole process. Even a speedy delivery. I received the knives last week but due to moving I haven’t really been cooking so tonight I made the exception and bit the bullet, boy am I glad I did. It’s like Christmas came early.

Brad is one of the few in this world who really want a happy customer. I personally thought it was a scam when I didn't hear anything from HandFab but suddenly Brad got my phone number and wattsapp account and reached out. All the mails he tried to contact me was put in the garbage mail bin. That was honorable of him to not give me up and worked hard to give me the product. The product itself is amazing nice handcrafted and I recommend from a Norwegian user🇳🇴🫡
Honestly, I don’t even know where to start.
I’ve spent more money than I’d like to admit on Japanese knives over the years, but the MK-1 Double Saber (Somewhere in the Galaxy) is easily my favourite knife I’ve owned. Since getting it, it’s the one I reach for every day.
The weight and balance just feel right. It takes a great edge, sharpens easily, and has had no problem keeping up with the 50–70kg of prep I do every week as a chef. It’s one of those knives that just feels like it was made to be used.
I was that impressed with it that I ended up commissioning a custom knife as well. The whole process has been brilliant. Every question I’ve asked has been answered, and the amount of time that’s gone into talking me through different steels, profiles and handle options has been amazing.
The thing that impressed me most was that it never felt like I was being pushed towards spending more money. The advice was always about what would suit me best, not what would make the biggest sale. That’s pretty rare these days and says a lot about the person behind the knives.
It’s obvious there’s a lot of pride in the work, and it shows in the finished product. I honestly couldn’t recommend Handfab enough, and I’m looking forward to seeing my custom knife finished.

En ærlig og æreskjær som gjør det lille extra for å få en fornøyd kunde da kunden var håpløs å få tak i🤣 Kan absolutt anbefales å kjøpe noe kniver av HandFab sine produkter. Har ikke prøvd kniven så veldig mye men den ene middagen jeg laget var jeg veldig fornøyd og kvalitet er et must🙌🫡🇳🇴

I'm always in awe of people who can create something that's both beautiful and functional with their own hands. I'd been following HandFab (Brad) for quite a while before finally taking the plunge and buying one of his knives, and I'm so glad I did. The craftsmanship is exceptional, with real attention to detail, and the performance is every bit as impressive. It cuts like a laser. A fantastic piece of work that I'm proud to own.
The quality of this gentleman’s offerings is hard to put into words. Brad is an old soul, his designs, blending of cultures and most importantly the ability to mix together steel, handle material, form and function is a timeless art that few people of our generation would could even comprehend yet alone master. The ergonomics, edge of the carbon steel blades and over all function of his cutlery is some of the finest bespoke knives that I have ever come across in my lifetime. So many good things to say: first of all, the knives are great and have excellent cutting performance. Prices are really really fair, to say the least. The design is creative and unique. And Brad is a super nice and passionate knifemaker!! If you’re on the lookout for some serious blades from up and coming makers, he’s one I’d seriously consider.

Had a few things from Jamie over the last few months - a couple of slate hammers and a knife. Couldn’t be happier with both, definitely realise they’re worth the money when you have them in your hand. I ordered a custom bunka called Marrow and the whole experience was excellent from start to finish. Communication was brilliant, with fast replies, plenty of detail, and complete transparency around the steel, geometry, handle materials and finish. Every question I had was answered clearly, which made the buying process feel really reassuring.
The knife itself is beautifully made and full of character. The craftsmanship, balance, handle work and overall design are all superb. I haven’t used it properly yet, but first impressions are fantastic and it feels great in a pinch grip.
A genuinely special handmade knife with real personality. No bones about it, I’m very happy.
