The Classic Series MK-III. A western-bellied daily workhorse.
The Classic Series MK-III takes the proven MK-III blade profile from the Signature Series and pairs it with carefully considered materials and finishing choices, creating a more accessible knife with no compromise on the performance that matters. Built as a dependable daily workhorse, it delivers exceptional cutting performance, durability and value.
The Blade
The blade is made from 80CrV2 carbon steel, chosen for its toughness, excellent edge retention and ease of sharpening. It draws on a more western blade shape while keeping a Japanese-style geometry, with a little more belly to the profile for an easy rock motion in use. A flat heel paired with a rounded front section gives sweeping, controlled cuts and excellent board contact. At 200mm long with a generous 58mm heel height tapering to an extremely fine point, the blade offers excellent precision for detailed work while keeping a confident, purposeful presence.
The Handle
The handle is a traditional wa-style handle in ebony and rosewood. Simple, elegant and comfortable in use, it gives excellent balance and control while complementing the blade's clean, functional design. The natural character of the wood means every knife carries its own subtle individuality.

Care

Care & sharpening
Looked after well, a HandFab knife will serve you for a lifetime. Keep the blade clean, dry it after use and give it a light coat of food-safe oil now and then. Carbon steel will earn a patina with use, part of its character. Hand wash only, never the dishwasher, and store it somewhere the edge is protected.
When the edge eventually needs bringing back, send the knife home to the workshop. Brad re-grinds and hones it by hand on the same stones it was finished on, so it returns as sharp as the day it left. The sharpening service is £15 per knife, plus return delivery.

Classic Series
This knife does not exist yet.
It takes the proven blade profiles from our Signature Series and pairs them with more accessible materials and finishing. It will be profiled, ground, fitted and finished by hand in a Scottish workshop, for you, after you order it. Here is what that looks like.
The steel
80CrV2 carbon, profiled from stock before any of the hand work begins. It is chosen for toughness, edge retention and how readily it sharpens, the same steel the Signature knives are made from. Every blade is then worked individually rather than run down a line.
Ground by eye
The bevel is set by hand on the grinder, judged by feel and sight. The geometry is Japanese in influence and the profile is proven, taken straight from the Signature Series, which is what gives controlled cuts and full contact with the board.
Fitted to timber
Ebony and rosewood, shaped to the tang as a traditional wa-style handle. Simple and comfortable in use, it balances the blade and complements its clean, functional design. The natural character of the wood means yours carries its own individuality.
Finished and boxed
The edge is refined and the maker's mark stamped. It ships with a branded saya, wrapped in linen and presented in a branded box, dispatched using a 24 hour age verification service.
