“Bloom” Nakiri Kitchen Knife
The knife that defines the brand.
Product details
The “Bloom” Nakiri is made from 26C3 carbon steel and sits at 175mm long and a generous 60mm in height.
It has a brushed finished with a polished spine and choil. I decided to leave the temper colours on the ricasso for visual effect however they do serve a purpose: By tempering the ricasso it brings the hardness down and increases toughness, making that area more durable.
The handle is made from stabilised masur birch, featuring lovely pinks, purples and greens. The bolster is made from gloss black G10 and the tang of the blade rests nicely in an exposed pine dowel.
Not only does this knife look visually striking, it will make light work of anything on the chopping board!

Care & sharpening
Looked after well, a HandFab knife will serve you for a lifetime. Keep the blade clean, dry it after use and give it a light coat of food-safe oil now and then. Carbon steel will earn a patina with use, part of its character. Hand wash only, never the dishwasher, and store it somewhere the edge is protected.
When the edge eventually needs bringing back, send the knife home to the workshop. Brad re-grinds and hones it by hand on the same stones it was finished on, so it returns as sharp as the day it left. The sharpening service is £15 per knife, plus return delivery.
