What better way to introduce both the MK-II and MK-III than dropping them as part of a collection.
First up, the MK-II: A petty knife built off the MK-I. Designed to give people a smaller, nimble option for finer tasks, and a way to build out a full set.
Then the MK-III. Still rooted in the MK-I, but pushed in a more western direction..a bigger belly for those who prefer rock chopping.
All three knives are designed to sit together as a set. Same DNA throughout: a 90° heel to the spine, aggressive tips, and a look that’s anything but boring.
Now for this month’s collection… “On the Rock’s.”
Inspired by famous cocktails and mixology, this is easily the most colourful and bold drop yet.
The blade features a brushed finish with a burnt tang. Inspired by the blow torches and smoke you often see used in bars.
The handles take the form of my usual- Hybrid WA style. Chamfered edges at the top with a rounded belly for comfort. They are made from kirinite, a cast thermoset acrylic made by GPS agency.
And yeah- the apostrophe is intentional. Just a style choice to make it stand out. Will it make some people look twice? Yeah, as it should!
The MK-I and MK-III stand 60mm tall by 200mm long.
The MK-II is 35mm tall by 125mm long.
All knives are made from 80CRV2 with a HRC of approximately 61.
Each knife is sharpened and oiled- presented with a branded saya, wrapped in linen, housed in a branded cardboard box, and shipped via 24-hour age-verified delivery. (For UK)

Brad is one of the few in this world who really want a happy customer. I personally thought it was a scam when I didn't hear anything from HandFab but suddenly Brad got my phone number and wattsapp account and reached out. All the mails he tried to contact me was put in the garbage mail bin. That was honorable of him to not give me up and worked hard to give me the product. Honestly, I don’t even know where to start.
I’ve spent more money than I’d like to admit on Japanese knives over the years, but the MK-1 Double Saber (Somewhere in the Galaxy) is easily my favourite knife I’ve owned. Since getting it, it’s the one I reach for every day.
The weight and balance just feel right. It takes a great edge, sharpens easily, and has had no problem keeping up with the 50–70kg of prep I do every week as a chef. It’s one of those knives that just feels like it was made to be used.
I was that impressed with it that I ended up commissioning a custom knife as well. The whole process has been brilliant. Every question I’ve asked has been answered, and the amount of time that’s gone into talking me through different steels, profiles and handle options has been amazing.
The thing that impressed me most was that it never felt like I was being pushed towards spending more money. The advice was always about what would suit me best, not what would make the biggest sale. That’s pretty rare these days and says a lot about the person behind the knives.
It’s obvious there’s a lot of pride in the work, and it shows in the finished product. I honestly couldn’t recommend Handfab enough, and I’m looking forward to seeing my custom knife finished.

I'm always in awe of people who can create something that's both beautiful and functional with their own hands. I'd been following HandFab (Brad) for quite a while before finally taking the plunge and buying one of his knives, and I'm so glad I did. The craftsmanship is exceptional, with real attention to detail, and the performance is every bit as impressive. It cuts like a laser. A fantastic piece of work that I'm proud to own.
The quality of this gentleman’s offerings is hard to put into words. Brad is an old soul, his designs, blending of cultures and most importantly the ability to mix together steel, handle material, form and function is a timeless art that few people of our generation would could even comprehend yet alone master. The ergonomics, edge of the carbon steel blades and over all function of his cutlery is some of the finest bespoke knives that I have ever come across in my lifetime. So many good things to say: first of all, the knives are great and have excellent cutting performance. Prices are really really fair, to say the least. The design is creative and unique. And Brad is a super nice and passionate knifemaker!! If you’re on the lookout for some serious blades from up and coming makers, he’s one I’d seriously consider.

Had a few things from Jamie over the last few months - a couple of slate hammers and a knife. Couldn’t be happier with both, definitely realise they’re worth the money when you have them in your hand. I ordered a custom bunka called Marrow and the whole experience was excellent from start to finish. Communication was brilliant, with fast replies, plenty of detail, and complete transparency around the steel, geometry, handle materials and finish. Every question I had was answered clearly, which made the buying process feel really reassuring.
The knife itself is beautifully made and full of character. The craftsmanship, balance, handle work and overall design are all superb. I haven’t used it properly yet, but first impressions are fantastic and it feels great in a pinch grip.
